The essence of Burgundy…
This family-run Burgundy domain, which dates back to 1692, has been managed by Marc-Olivier since 2004 when he succeeded his father François. Today he oversees an impressive range of Volnay (Taillepieds, Clos des Chenes, Champans, Carelles, Clos de la Rougeotte) and Pommard (Rugiens, Clos Micot, Poutures) vineyards.
Respect for the environment is a driving force behind this small, discreet domain not only in terms of protection but also to allow each parcel to fully express itself. Human intervention is kept to a minimum to allow the character and nature of each wine to shine through.
Harvest is entirely by hand and the grapes are strictly selected. Marc-Olivier uses some whole bunches when he feels ripeness is suitable, though not for young vines. The wines are matured in barrel for 18-24 months, using approximately 20% of new oak.
