Tannins are very supple for easy-drinking but structured enough to provide finish. Perfect for charcuterie, gouda, or vegetarian cuisine.
Grapes are grown on slopes with a mix of soils including the limestone Kimmeridgian type that is so common in northern Burgundy and in Champagne. Sun exposure is South/Southwest ensuring even ripening of the grapes.

Made popular in Paris and at the royal court by the cross-dressing spy and Knight of Eon, the wines of this area were known from the Middle Ages. Destroyed by phylloxera in the 1800s, the region was replanted in the 1970s according to a strict selection of plots.
